Hatsukokoro is a brand that works with many blacksmiths, sharpeners and knife manufacturers from all over Japan in order to bring you knives with an excellent quality to price ratio. This doesn't mean their knives come cheap, but the quality of finishes, heat treatment and grind that you get for every dollar paid would exceed the industry average. Among their line up are knives made by Nakagawa, Yoshikane, Myojin, Yauji, and many more. Many collections are specifically commissioned and produced for Hatsukokoro and you won't be able to see these lines with any other brands.

Ginsou translates to "Silver Frost" referencing the hazy and frosty damascus pattern on the blade. Crafted with a Ginsan (Silver #3) stainless steel core, this knife offers the perfect balance of sharpness, durability, and easy maintenance. The unique haze-like damascus enhances the visual depth, reminiscent of thin fog floating above water, while the silky-smooth Migaki finish—aligned parallel to the spine—adds a refined touch rarely seen in knives at this level. Each blade is finished with a hand-chiseled signature, a detail typically reserved for high-end knives.
 
In terms of technical aspects, this blade features a thin, hollow grind which enhances food release. The rounded spine and choil provide a smooth, ergonomic grip for extended comfort.
