Hatsukokoro is a brand that works with many blacksmiths, sharpeners and knife manufacturers from all over Japan in order to bring you knives with an excellent quality to price ratio. This doesn't mean their knives come cheap, but the quality of finishes, heat treatment and grind that you get for every dollar paid would exceed the industry average. Among their line up are knives made by Nakagawa, Yoshikane, Myojin, Yauji, and many more. Many collections are specifically commissioned and produced for Hatsukokoro and you won't be able to see these lines with any other brands.
The word Hayabusa translates to Falcon. You'll typically see this word used as a name for high performance bikes and fighter jets. In the same spirit, the HAP40 Hayabusa collection from Hatsukokoro is the definition of high performance. While not a true laser, these knives are ground thin. Thin enough that the blade easily bites into anything you cut (be careful with your fingers), but not too thin as to become incredibly fragile. In addition, the convexed and migaki (polished) blade allows the blade to effortlessly cut through hard produce.
Then comes the best part. The Stainless Clad HAP40 High Speed Powdered Steel Core. HAP40 arguably has the best edge retention of any steel used in modern knife making. With the right heat treatment, this steel can reach HRC 66+ while still remaining tough and durable. The alloy content of HAP40 is so high, it becomes semi-stainless, even with a low chromium content of only 4%. Since the blade is stainless clad, its relatively easy to care for, just make sure to dry it throughly after washing (and oil if storing long-term).
Note: We have noticed the Haybusa collection may have hairline sratches on the blade which can be seen in certain lighting conditions. Please take note this is not a defect.
