Hatsukokoro is a brand that works with many blacksmiths, sharpeners and knife manufacturers from all over Japan in order to bring you knives with an excellent quality to price ratio. This doesn't mean their knives come cheap, but the quality of finishes, heat treatment and grind that you get for every dollar paid would exceed the industry average. Among their line up are knives made by Nakagawa, Yoshikane, Myojin, Yauji, and many more. Many collections are specifically commissioned and produced for Hatsukokoro and you won't be able to see these lines with any other brands.

The Kurokaze series from Hatsukokoro features traditionally forged iron-clad carbon-steel knives from Sakoda Hamono based in Tosa. Usually rough around the edges, these knives give off a rustic and rugged feeling. Holding one of these knives will give you a sense of confidence and power, these knives aren't thin and brittle, they are thick and powerful tools meant to be used and abused.

A double beveled kiritsuke deba is quite a rarity, normally you don't see many debas with a k-tip, let alone a double beveled one. The great news about this deba: it can be used by both lefties and righties. The Blue #2 core gives you excellent edge retention while still remaining very easy to sharpen. Do note that since this deba is fully carbon steel, extra care has to be taken to prevent rusting. Please take care to dry the knife thoroughly after washing, let it air dry, then oil and store the knife somewhere dry.
