Hatsukokoro is a brand that works with many blacksmiths, sharpeners and knife manufacturers from all over Japan in order to bring you knives with an excellent quality to price ratio. This doesn't mean their knives come cheap, but the quality of finishes, heat treatment and grind that you get for every dollar paid would exceed the industry average. Among their line up are knives made by Nakagawa, Yoshikane, Myojin, Yauji, and many more. Many collections are specifically commissioned and produced for Hatsukokoro and you won't be able to see these lines with any other brands.

The Hatsukokoro x Yoshikane Hamono collection, embodies the pinnacle of Japanese craftsmanship. Finished with a subtle Nashiji texture, this knife exudes character without compromising smoothness. Forged with an SKD12 semi-stainless core and treated to HRC 63-64, it delivers a razor-sharp edge with outstanding retention, combining the performance of carbon steel with the convenience of stainless. The stainless cladding ensures resistance to rust, while the convex grind reduces food sticking and enhances durability. Yoshikane’s masterful grinding creates a thin edge, making each cut feel seamless.

The Sanjo-style distal taper, with a thick spine near the handle that thins toward the tip, provides impeccable balance, control, and precision. This spine thickness gives the knife some heft, along with its thin and slicey edge, allows for effortless push/pull cutting.

This specific 240mm Gyuto is custom made for Hatsukokoro, made to be extra tall (56mm blade height vs 50mm in the regular 240mm Gyuto). The result is an absolute tank of a gyuto that feels heavy and powerful. Combined with outstanding cutting performance of the blade, this knife easily drops through vegetables like they aren't even there. It truly is an experience.

p.s. The Yoshikane SKD Nashiji Kiritsuke was featured in the Netflix series "Culinary Class Wars" and used by finalist Triple Star renowned for his precise and fine cutting.
