Naniwa Traditional 6000

The T-360 traditional stone by Naniwa is a goldilocks stone that does everything well for an affordable price. It offers a great balance between toothiness and refinement. It's not too hard (which can be slippery) and not too soft (which can be easily gouged). The one thing that is exceptional is the value that this stone provides, it's a high quality polishing stone for not a lot of money. Because the stone is somewhat harder compared to most polishing stones, it should last a long time too.

Troubleshooting:
If your edge is sharp in some areas but not in others, check that you have deburred consistently throughout the edge. Also, make sure you have a consistent sharpening angle throughout the length of the blade.
