Crafted by legendary blacksmith Takeshi Saji in Takefu Knife Village, this stunning gyuto showcases the new SG STRIX PM stainless steel, hardened to an impressive HRC 65. STRIX offers the best of both worlds: extreme edge retention with a smooth, easy sharpening experience - thanks to its ultra-fine grain structure and somewhat lower carbide content.

The blade features a mirror tsuchime finish, giving it striking visual depth while also helping with food release. True to Saji-san’s craftsmanship, every detail is hand crafted using traditional methods passed down for centuries. Recognized as a “Traditional Master Craftsman” by the Japanese government, Saji-san continues to redefine what’s possible in Japanese knife making even as he approaches old age.

We are using "Red Opal" to desribe the handle of this knife as the depth and swirls in the polished resin handle reminds us of this rare gemstone.
