Tsunehisa translates to "Permanence", named after the idea that good knives will last you a lifetime. Tsunehisa's knives are made by a collective of blacksmiths and sharpeners across Sakai, Tosa and Seki. The brand was founded by Takayuki Shibata, world reknown for being an excellent knife sharpener and also the founder of Masakage, Koutetsu & Tinker. Over the years, Shibata-san has built close relations with many skilled blacksmiths across Japan, playing a huge role in growing the presence of Japanese kitchen knives internationally.
The Tsunehisa Ginsan Kiritsuke Yanagiba 270mm is designed for the precision slicing required in traditional sushi and sashimi preparation. Forged in Tosa, Japan, this yanagiba features a long, narrow blade that allows for smooth, single-stroke cuts and minimise friction for clean, effortless slices.
Crafted from Hitachi’s Ginsan (Silver 3) stainless steel, this knife offers the razor sharpness and easy sharpening typically found in carbon steel, while maintaining excellent corrosion resistance for easy maintenance. The octagonal magnolia handle with a buffalo horn ferrule provides a traditional yet ergonomic grip, offering excellent control and balance.
