Tsunehisa translates to "Permanence", named after the idea that good knives will last you a lifetime. Tsunehisa's knives are made by a collective of blacksmiths and sharpeners across Sakai, Tosa and Seki. The brand was founded by Takayuki Shibata, world reknown for being an excellent knife sharpener and also the founder of Masakage, Koutetsu & Tinker. Over the years, Shibata-san has built close relations with many skilled blacksmiths across Japan, playing a huge role in growing the presence of Japanese kitchen knives internationally.
Tsunehisa's VG10 Tsuchime collection does everything right. It's got a great steel with plenty of edge retention, it's stainless and decently easy to sharpen, its profile is versatile and easy to use, and lastly it's got a great price point. This is a bread and butter sort of knife, a staple knife you can just get and go. No fuss, no drama - it works and is reliable. It's not a laser and not a workhorse, but rather an all-rounder. Great as your first knife and introduction into the world of Japanese knives.
