Based out of Echizen, Yu Kurosaki has focused his career on creating not just functional kitchen knives, but unforgettable pieces of art. He has been certified by the Japanese government as a "Dentokogeshi" or Master of Traditional Crafts - recognising his skills and expertise in traditional knife making.
The Kokusen series combines Kurosaki’s iconic tsuchime texture (seen in the Senko series) with a dark kurouchi finish, bringing a slightly rustic twist to his usual bright and flashy blades. It's an interesting contrast - a bold, intense and character-filled kurouchi with the refinement that Kurosaki's knives usually have. The “Ei” style blade slopes slightly downwards which adds extra heel height and knuckle clearance while not adding any bulk to the blade, keeping it light and nimble in hand.
Its Aogami Super core offers an excellent cutting performance due to its fine grain structure and high hardenability, allowing this knife to get sharper and stay sharper for longer. However, it runs into a major downside - rust. That's where the stainless cladding comes into play. While the cutting edge is carbon steel, it is sandwiched between 2 layers of stainless steel which as its name implies, is highly rust resistant. The end result is a knife that cuts like a carbon steel but with much less maintenance.
